Chopped Cucumber Kale Salad

  • 1 cucumber, peeled and chopped
  • 3 stalks celery, chopped
  • 2 large tomatoes (or 3 roma tomatoes), chopped
  • 1/2 bunch scallions, chopped
  • 1/2 bundle purple kale, finely chopped and massaged
  • 1 avocado, pitted, peeled, and cubed
  • 1 orange, juiced
  • salt and pepper to taste

Chop all vegetables and mix together in bowl. Juice orange, pour over, salt and pepper, and stir to coat.   Enjoy!
